Do you know your rough puff from your filo or your shortcrust from your choux? Or looking to learn? Come along and find out how to make rough puff pastry from scratch and choose from a selection of fillings to make your own sausage rolls, corned beef or cheese pasty or smoked salmon tarts. You will also make a hot crust pastry to make your own sausage and apple pie. You will take home what you make and receive recipe cards for the items you have cooked so that you are ready to make these again at home.

What are you doing to keep learners safe?

The safety of our learners and staff is our top priority and we’ve made some big changes to our centres, from socially-distanced training rooms to staggered start times. Although things will look different, our staff will be as friendly and helpful as ever and we’re really excited to welcome learners back.

What do I need to join the course?

Just an enthusiasm to learn and a willingness to have a go.

What do I need to bring with me to the first session?

Please bring an apron with you and a container with a lid to take home what you make. You will also need to bring with you the following ingredients:

Everyone will need to bring:

  • For the rough puff pastry please bring 125g butter
  • For the sausage and apple pie with a hot water crust pastry please bring 225g sausagemeat and ½ a cooking apple

Depending on which one of the pies/pasties below you would like to make, please also bring:

To make a sausage roll please also bring:

  • 100g sausage meat,
  • 1 small onion,
  • 25g of grated cheese (optional)
  • a slice of black pudding (optional)

To make a corned beef pasty please also bring:

  • 100g corned beef
  • 65g tinned potato
  • 25g tinned carrots
  • ½ onion

To make a cheese pasty please also bring:

  • 150g grated cheese
  • 100g tinned potato
  • ½ onion or 1 spring onion

To make a smoked salmon tart please also bring:

  • 30g smoked salmon
  • 50g cream cheese

How will I be taught?

You will participate in both group demonstrations and work alongside the tutor to practise the skills and techniques of preparing these savoury pastry treats.

What will I learn?

Our tutor will guide you through the processes of preparing these savoury pastries, giving you the confidence and skills needed to make them again at home. You will also learn some useful tips and tricks on how to present your dishes and also learn about the nutritional and cost benefits of home cooking.

Your tutor will discuss our range of short courses with you, including themes such as bread, biscuits, soups, batch cooking, desserts, family cookery, speciality world cuisine, healthy eating, meals on a budget and pastry making, to name but a few. We will also cover the nutritional and financial benefits of home cooking, such as how to batch cook to fill up your freezer and use up those leftovers!
