White sauce forms the basis for some delicious hearty dishes that are perfect for cold, dark nights. In this session you’ll learn how to make the perfect white sauce and how to use it in three great recipes – lasagne, pasta and fish pie. We’ll talk about the nutritional value of the meals we’re making, and the cost benefits of making big portions so you can feed family or friends – or just save some for tomorrow (and the day after). At the end of the course you’ll get a recipe card so you can easily make your dishes again at home.

What are you doing to keep learners safe?

The safety of our learners and staff is our top priority and we’ve made some big changes to our centres, from socially-distanced training rooms to staggered start times. Although things will look different, our staff will be as friendly and helpful as ever and we’re really excited to welcome learners back.

What do I need to join the course?

Just an enthusiasm to learn and a willingness to have a go. Please note that East Riding of Yorkshire Council is unable to guarantee a completely allergen free environment. If you would like more information prior to booking please contact us.

What do I need to bring with me to the first session?

Please bring an apron with you and a container with a lid to take home what you make. You will also need to bring with you the following ingredients: Lasagne – 200g of minced beef, 1 onion, 1 beef stock cube, 4 mushrooms, 1 red pepper, 1 carrot, a small tin of tomatoes, 3 sheets of lasagne. You will need to bring an oven proof dish, approx. 600ml to cook your lasagne in. Cheesy vegetables or Cheesy pasta bake – 100g of grated cheese, 30g of parmesan, 2 tbsp of either breadcrumbs or plain crisps (gluten free bread is fine to use). You will need to bring an oven proof dish, approx. 400ml, to cook your pasta bake in. In addition please bring 150g in total of any of the following ingredients: broccoli, cauliflower, pasta (macaroni, penne, spirals), 2-3 slices of ham. If you can’t decide you can bring a combination of these up to a total of 150g. Fish pie – 1 onion, 100g of fish pie mix (it is best to buy frozen), 25g of frozen peas, 25 of frozen sweetcorn and 2 large potatoes. You will need to bring an oven proof dish, approx.. 600ml, to cook your pie in. You may also like to bring 50g of grated cheese and / or 50ml of white wine.

How will I be taught?

You will participate in both group demonstrations and work alongside the tutor to practise the skills and techniques of preparing and making healthy and budget food.

What will I learn?

Our tutor will guide you through the processes of preparing these delicious and nutritious meals, giving you the confidence and skills needed to make them again at home. You will also learn some useful tips and tricks on how to present your dishes and also learn about the nutritional and cost benefits of home cooking.

Your tutor will discuss our range of short courses with you, including themes such as bread, biscuits, soups, batch cooking, desserts, family cookery, speciality world cuisine, healthy eating, meals on a budget and pastry making, to name but a few. We will also cover the nutritional and financial benefits of home cooking, such as how to batch cook to fill up your freezer and use up those leftovers!
