Now that food and energy bills are soaring, due to the cost of living, working out how to create nutritious meals on a budget is a constant challenge. Slow Cookers are an energy efficient way to cook food; they're great for batch cooking, so you'll always have something delicious to eat at the end of a long day. In this session, our experienced tutor will show you how to create 4 'dump bags' ready to freeze and cook in a slow cooker or on the hob. A dump bag is where you prepare all (or most) of the ingedients for a slow cooker meal, put them into a freezer container, and label and freeze until you want to cook them. You will prepare sausage casserole, pulled pork, slow cooker chilli, and chunky chickpea and chorizo soup. No need to buy ready meals any more - you'll have your own healthy, options ready to use. What do I need to provide for the first session?

Sausage casserole.

This is a very versatile recipe you can substitute any of the vegetables or leave out some of the ingredients to your own taste.

  • 8 Sausages (Cumberland or Lincolnshire are great for flavour) OR 12 Chipolatas
  • 1 red onion
  • 1 clove garlic
  • 2 sticks celery
  • 2 carrots
  • 1 pepper
  • 1 sweet potato or 2 medium potatoes
  • 1 tin of any of the following: butter, haricot, kidney, mixed beans or chick peas.
  • 1 tbls tomato puree
  • 1 tsp paprika
  • 1 tin chopped tomatoes
  • 1 tsp Bovril or 1 beef stock pot

Pulled pork

Ingredients

  • 3 tbsp tomato purée
  • 1 tsp paprika or bbq seasoning
  • 2 oranges, juice only
  • 1 tbsp black treacle (this can be omitted or substituted with honey or brown sugar)
  • 3 tbsp apple cider vinegar (white wine vinegar would also work)
  • 4 pork shoulder steaks, or 600g /1lb 5oz boneless, pork shoulder joint, rind
  • Removed. (for a vegetarian alternative you can use a tin of jackfruit drained)
  • 1 onion
  • freshly ground black pepper
  • A budget busting and super quick alternative is to use 100ml of BBQ sauce, 1 tbsp paprika or BBQ seasoning, ½ tsp sugar, salt and pepper

Slow cooker Chilli

  • 400g - 500g pack mince beef
  • 1 onions (red onions are fine)
  • 1 red / yellow or orange pepper (or handful of frozen peppers)
  • 2 cloves of garlic
  • 1 red chilli (optional)
  • 1 can of kidney beans (other tinned beans can also be used)
  • 1 tin of chopped tomatoes
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 sq dark chocolate ( or 1 tsp cocoa powder)
  • 1 tsp Bovril or beef stock cube
  • To make the chilli go further you could add 100g green lentils

Chunky chickpea and chorizo soup

  • 1 onion
  • 2 cloves garlic
  • Approx 200g cooking chorizo (not pre-sliced)
  • 1 tsp paprika
  • 1 tbsp tomato puree
  • 1 Medium sweet potato
  • 1 tin chickpeas
  • 2 stock cubes (veg or chicken)
