If you’re having some friends over during the festive period why not step up your snacks and treats with our easy festive canapes course? Over this session you’ll learn how to make fancy nibbles like blinis, crackers and smoked mackerel pate which will make sure you’re definitely the host with the most.

At the end of the course you’ll take home what you’ve made as well as a recipe card so you can do it all over again for the best party of the season.

What will I learn?

Our tutor will guide you through the processes of preparing these delicious nibbles, giving you the confidence and skills needed to make them again at home. You will also learn some useful tips and tricks on how to present your dishes and about the nutritional and cost benefits of home cooking.

What do I need to join the course?

Just an enthusiasm to learn and a willingness to have a go.

What do I need to bring with me to the first session?

Please bring an apron with you and suitable containers with leak proof lids to take home what you make. You will also need to bring with you the following ingredients:

Blinis

  • 50g Cream Cheese
  • You may also like to bring 50g prawns or smoked salmon

Christmas crackers/parcels – for the pastry and garnish

  • 100g packet of ready rolled filo pastry
  • a small quantity of fresh chives
  • 1 small red pepper

Please then choose 1 of the following fillings to make:

Avocado, lemon and prawn – please bring:

  • 1 small lemon
  • 1 spring onion
  • 25g (1oz) of fresh peeled prawns
  • 1 small ripe avocado.

Feta and lime - please bring:

  • 1 small lime
  • 25g (1oz) of feta cheese
  • a small quantity of fresh coriander

Sausage and cranberry:

  • 2 chunky sausages
  • a little cranberry sauce
  • 25g (1oz) of fresh peeled prawns
  • 13g (½oz) of beansprouts
  • 1 small green pepper

Brie and cranberry:

  • 25g (1oz) of brie
  • a little cranberry sauce

Your tutor will discuss our range of short courses with you, including themes such as bread, biscuits, soups, batch cooking, desserts, family cookery, speciality world cuisine, healthy eating, meals on a budget and pastry making, to name but a few. We will also cover the nutritional and financial benefits of home cooking, such as how to batch cook to fill up your freezer and use up those leftovers!
